Chocolate Dipped Strawberry Marshmallows


A few days ago, a post popped up in my Google reader that piqued my attention. It was a post about chocolate covered strawberry marshmallows. I starred it for later because, well…chocolate and strawberry marshmallows? Yes, please! The post was from Molly Jean over at The Rookie Chef. When I was trying to decide what to make for my classroom Valentine’s party, these were a perfect choice. I decided to snap a few extra pictures for your viewing pleasure.

Chocolate Dipped Strawberry Marshmallows

You need:

1 bag of marshmallows (I ended up using the large strawberry ones)

~ 6 squares of almond bark (not pictured) OR 1 bag chocolate chips

lollipop sticks (I found Wilton ones at Walmart)

sprinkles

A dish to work over (to catch runaway sprinkles)

Something to hold finished dipped marshmallows (I used a block of styrofoam)

Step 1: Start by melting the almond bark on the stove on VERY low heat (I just set my stove to warm). You can use a double-boiler, but don’t have to.

Step 2: Insert sticks into marshmallows: 

Step 3: Swirl the marshmallows into the chocolate, covering the top 2/3. Sorry, no pictures. It’s too hard to swirl and shoot at the same time!

Step 4: Sprinkles!

Step 5: Stick into the styrofoam holder and stick in the fridge for ~ an hour. This will allow the chocolate to completely harden.

Step 6: Wrap! I found cute bags at Dollar Tree and then used curling ribbon to tie it.

These were a hit! They were tasty, too.

MLK, the man with a dream

In honor of my day off work today, I thought I’d do an MLK-themed post. (No, I am not African American, but I still highly respect Dr. King and I think he was an amazing man with amazing hopes and dreams. Therefore, I will be celebrating along with everyone else.)

First, I want to share this video with you. I’m sure most of you have seen it, but I love to break it out this time of year. It’s so beautifully done. If you haven’t seen it, I’m happy to expose you to it for the first time. Well done, John Legend.

Recappin’ it…Christmas style

How was your Christmas? Ours was sort of untraditional but really great nonetheless. It was my sister’s first Christmas away from our parents, so she and her boyfriend came over and hung out at our house.

We opened our presents at Christmas. It’s a pretty low-key affair. I got the card and the external drive from Rusty that I showed in my last post. Chelsea got us some yummy goodies from the Rocky Mountain Chocolate Factory and some toys for the pugs. Here’s Zoey enjoying her toy:

She really loves those Loofah dog toys, but the poor thing will have no guts in a few days. She looks cute, but she’s vicious. Don’t let the sad eyes fool you.

I made a breakfast casserole (recipe coming soon) and the 4 of us watched Home Alone 2. Isn’t it depressing to see how cute Macaulay Culkin was and to know what a skeeze he grew up to be?

So sad.

After the movie and a bit of video game play, we decided to head out in search of food. In our suburban northern OK town, there just isn’t much open on Christmas day. It was IHOP or Chinese. We went for the Asian flair. Ha.

 

I snapped this Christmas Story-esque picture of my sister on the way in to send to my mom.  We were singing our “Fa-ra-ra-ra-ra-ra-ra-ra-rahs” all the way to the buffet line.

My mom of course had to warn us not to shoot our eye out. To which my sister replied:

 

 

Ouch! Too late.

 

 

 

 

After a nap and a late night round of Monopoly (I got my butt kicked of course), we called it a night. Not too bad of a day, I must say.

Today held a whole lot of nothing. My big accomplishment? Spending a few of the gift cards that I received from my students. Here’s my haul:

Total cost out of pocket for these: $5.36. Yippee!

You guys! Rusty decided to make me a home made Christmas card this year to add to his present. Which was this, by the way :

Anyway, he is going to KILL me when he finds out I showed you this. He went to Walmart and bought the supplies to make this all on his own, just because he wanted to. How sweet is he? He was embarrassed and thought it looked terrible though. Me? I thought it was genius.

That’s Voldemort on the left. He’s about to Crucio Santa, but Santa expertly uses the candy cane he has to blast a spell back at Voldy. I died  little when I opened this.

The Back:

In case you can’t read it, it says: “Santa saved X-Mas just like that…I guess what I’m trying to say is, I love you and I hope nothing ever stands in the way of your happiness. Merry Christmas!!”

Merry Christmas


Merry Christmas to everyone! I hope that all of you are having a safe and relaxing holiday with some family. Rusty and I have chosen to stay home this year and enjoy each others company. That was probably a good idea, because travel in and out of the state is virtually nonexistent. Oklahoma was rattled by a VERY unusual snowstorm. When it snows here, we usually get 1-2 inches. Yesterday, we got around 12 inches.

I wish I had a Christmas tree picture to share with you, but we didn’t even put one up this year. I was sort of in a grinchy mood and didn’t want to fit it into our tiny apartment. Next year, hopefully we will be in a bigger place and be able to fully celebrate. We didn’t even wrap presents this year.
For Christmas, I got Rusty guitar lessons. He’s been wanting them for a while.

He got me a tripod to go with my camera.

Again, I want to wish everyone a safe and happy holiday season. May you get everything you want, eat way too much food, and not murder your family that drives you crazy.

Happy 4th of July

Happy 4th of July, everyone! I hope that no matter how you celebrate it, you are safe and have a wonderful time. I think that we have plans to take Chelsea to the OKC memorial and then enjoy the 4th festivities in Bricktown. We haven’t been to the memorial in over 5 years. I’m glad to get to go back. Hopefully, the sweltering heat will lay off for a while and give us a break tonight. I hear there’s supposed to be some great food before the fireworks begin. I would hate to have that spoiled by sweat rolling down my back. Sorry, I’m a priss.

I’d like to say thank you to all of the soldiers that are proudly serving our country right now. I know that many of you are sacrificing time with your families during the holiday to keep us safe. While I may not agree with some of the missions that you’ve been assigned to, I will always support you. Stay safe, wherever you are, so that you can make it safely back to the place that you’re working so hard to protect. We love you!
